  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking dish with olive oil.
  2. Season chicken breasts with salt and pepper.
  3. In a bowl, whisk together balsamic vinegar, honey (or maple syrup), basil, oregano, and garlic.
  4. Sear chicken in olive oil for about 2-3 minutes on each side until golden brown.
  5. Place chicken in the baking dish and pour balsamic sauce over it. Add cherry tomato halves around the chicken.
  6. Bake for 20-25 minutes until almost cooked through; sprinkle mozzarella on top.
  7. Return to oven and bake for an additional 5-10 minutes until cheese is melted and chicken reaches an internal temperature of 165°F (74°C).
