  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold, cut into cubes
  • 3/4 cup brown sugar, dark preferred
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tablespoon molasses
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (180°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, ginger, cinnamon, nutmeg, baking powder, baking soda, and salt.
  3. In another bowl, cream cold butter with brown and granulated sugars until fluffy.
  4. Beat in the egg, molasses, and vanilla extract until well combined.
  5. Gradually mix in dry ingredients until just combined. Fold in white chocolate chips.
  6. Scoop dough into balls (about 1/4 to 1/3 cup each) and chill for 30 minutes.
  7. Bake for 14-17 minutes until set on top; cool on the sheet for 10 minutes before transferring to wire racks.
