  • 3 pounds boneless chicken thighs
  • 23 teaspoons Cajun seasoning
  • 1 tablespoon avocado oil
  • 8 tablespoons unsalted butter
  • ½ cup all-purpose flour
  • 1 large onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 2 stalks celery
  • 5 green onions
  • 6 cloves garlic
  • 3 cups chicken broth (warmed)
  • ¼ cup parsley leaves (loosely packed)
  • Cooked white rice for serving

Instructions

  1. Finely chop onion, bell peppers, celery, green onions, and parsley; mince garlic.
  2. Season chicken with Cajun seasoning. Heat avocado oil in a skillet and sear chicken thighs for 3-5 minutes per side until browned.
  3. In the same skillet, reduce heat to medium and melt butter. Whisk in flour until smooth; cook for 10-15 minutes until roux is medium brown.
  4. Add chopped vegetables to roux and sauté for about 10 minutes until softened; add garlic towards the end.
  5. Gradually whisk in warmed chicken broth; stir in browned chicken and simmer on low for about 30 minutes.
  6. Remove chicken, chop into bite-sized pieces, return to pot with parsley, adjust seasoning if needed.
