  • 1/2 cup walnut pieces (toasted for best flavor)

  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1/2 teaspoon dijon mustard
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried oregano

  • 1/4 teaspoon freshly ground black pepper
  • 2 Tablespoons sugar (or maple syrup, or honey)

Instructions

  1. In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, garlic powder, oregano, basil, black pepper, and sugar until well combined.
  2. If desired, toast walnuts in a dry skillet over medium heat for 3-5 minutes until fragrant.
  3. Slice apples and toss them with lemon juice to prevent browning.
  4. In a large bowl, mix the greens, sliced apples, dried cranberries, crumbled cheese (if using), toasted walnuts, and sliced red onion (optional).
  5. Drizzle half of the vinaigrette over the salad and toss gently until everything is coated evenly. Serve immediately.
