  • 150 g unsalted butter (melted)
  • 55 g unsalted butter (for streusel topping)
  • 50 g all-purpose flour
  • 50 g brown sugar (for streusel topping)
  • 20 g rolled oats
  • 3 tart apples (peeled and sliced)
  • 50 g brown sugar (for apple filling)
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 690 g cream cheese (softened)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 2 teaspoons vanilla extract
  • 3 large eggs

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. For the crust, crush the biscoff cookies and mix with melted butter. Press into the bottom of a springform pan.
  3. For the streusel, combine melted butter, flour, brown sugar, and oats until crumbly.
  4. Prepare the apple filling by tossing sliced apples with brown sugar, cinnamon, and cornstarch; layer over the crust.
  5. Mix cream cheese and granulated sugar until smooth; add Greek yogurt, vanilla, spices, and eggs one at a time until well combined.
  6. Pour cheesecake mixture over apples and sprinkle with streusel topping.
  7. Bake for about 85 minutes or until set but slightly jiggly in the center.
  8. Cool completely before refrigerating for several hours.
