3 thinly sliced apples
5 oz arugula
1/4 cup thinly sliced red onion
1/2 cup chopped figs
1/2 cup dairy-free cheese alternative
1 cup pecan halves
2 Tbsp maple syrup
Pinch of sea salt
1/2 cup olive oil
2 tsp lemon juice
1.5 tsp Dijon mustard
1/2 tsp pepper
1 garlic clove, minced
3 Tbsp balsamic vinegar
Instructions
Preheat oven to 350°F. Toss pecans with maple syrup and a pinch of salt. Spread on a parchment-lined baking sheet and bake for 5-7 minutes until toasted.
In a bowl, whisk together all dressing ingredients until well combined. Adjust seasoning to taste.
