  • 3 thinly sliced apples
  • 5 oz arugula
  • 1/4 cup thinly sliced red onion
  • 1/2 cup chopped figs
  • 1/2 cup dairy-free cheese alternative
  • 1 cup pecan halves
  • 2 Tbsp maple syrup
  • Pinch of sea salt
  • 1/2 cup olive oil
  • 2 tsp lemon juice
  • 1.5 tsp Dijon mustard
  • 1/2 tsp pepper
  • 1 garlic clove, minced
  • 3 Tbsp balsamic vinegar

Instructions

  1. Preheat oven to 350°F. Toss pecans with maple syrup and a pinch of salt. Spread on a parchment-lined baking sheet and bake for 5-7 minutes until toasted.
