  • 2 lbs bone-in chicken thighs or whole chicken pieces
  • 8 cups low-sodium chicken broth
  • 1 large yellow onion, diced
  • 3 medium carrots, sliced
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons ground turmeric
  • 1 tablespoon fresh ginger, grated
  • 1 can (14 oz) coconut milk

Instructions

  1. Heat oil in a large pot over medium heat. Add onion and sauté until translucent (about 3-4 minutes). Add carrots and celery; cook for an additional 3 minutes.
  2. Stir in garlic, turmeric, ginger, cumin, and black pepper. Cook until fragrant (about 30 seconds).
  3. Nestle chicken into the pot; cover with broth and water. Add bay leaf; bring to a gentle boil.
  4. Reduce heat to low and simmer for 45-60 minutes until chicken is tender.
  5. Remove chicken, shred meat from bones, and return to pot along with lemon juice and coconut milk.
  6. Simmer for another 2-3 minutes before serving.
