  • 1 medium potato, peeled and cubed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 can (15 ounces) diced tomatoes, undrained
  • 4 cups vegetable or chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups cooked egg noodles or any pasta of your choice
  • 1 cup heavy cream (optional for a creamy version)

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 diced onion and sauté until translucent (about 5 minutes).
  2. Stir in 2 minced garlic cloves, 2 diced carrots, and 2 diced celery stalks; cook for another 5 minutes.
  3. Add 1 cubed potato, 1 cup corn, 1 can diced tomatoes (with juice), 4 cups broth, 1 teaspoon dried thyme, 1 teaspoon dried oregano, salt, and pepper to taste. Bring to a boil then reduce heat and let simmer for about 20 minutes.
  4. If desired, stir in 2 cups cooked egg noodles and optionally add 1 cup heavy cream; heat through for an additional 5 minutes before serving.
