Ingredients

Scale
  • 2 lbs Russet potatoes
  • 1/2 cup milk
  • 4 tablespoons unsalted butter
  • 1/4 cup sour cream
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups panko breadcrumbs
  • Italian seasoning

Instructions

  1. Boil peeled and quartered potatoes in salted water until fork-tender (15-20 minutes). Drain well.
  2. Return drained potatoes to the pot and mash until smooth.
  3. Mix in milk, butter, sour cream, salt, pepper, and garlic powder until creamy.
  4. Allow the mixture to cool before forming into balls (about 1-2 tablespoons each).
  5. Set up a dredging station: flour in one bowl, beaten eggs in another, and panko mixed with Italian seasoning in the third.
  6. Roll each ball in flour, dip into egg, then coat with panko.
  7. Arrange coated balls on a baking sheet and chill for at least 30 minutes.
  8. Preheat air fryer to 400°F (200°C) and lightly spray the basket.
  9. Cook potato balls in batches for 8-10 minutes or until golden brown.
